Day Three

This morning was a blast! My sisters and I went horseback riding and had quite an adventure. The horses were feeling rather frisky this morning. Sierra was bucking all over the place, and the horse I was riding, Lacey, wanted to canter the whole trail. She even jumped a creek! I'm lucky I stayed on - I haven't jumped a horse in more than 10 years! For lunch, we're making organic penne with pesto and parmesan.

I'm looking forward to New Year's Eve tomorrow night. I can't quite believe another year has come and gone, but I'm looking forward to ringing in the next one with good food and great company!


Day Two



Yesterday was super relaxing. We made whole grain waffles for breakfast and served them with organic crunchy peanut butter and a maple agave blend syrup. I made it out for a short two mile run with my sister and stayed low key for lunch with some Amy's Organic Macaroni and Cheese.

For dinner, we made root vegetable and beef pot pies with ground beef from Greendale Farms - a local organic meat farm. The crust was the rosemary-garlic whole wheat pizza dough left over from the night before. They came out of the oven looking beautiful, but the dishes were so full that we served them flipped over.

Day One: Part Two


Success! I made it out for a "short" run. Four miles felt awfully long after almost three weeks off! I'll really have to get serious about training again soon, but for now, the cold weather keeps me inside most days. I always enjoy it and feel great when I'm done, but when the temperature dips below 40 degrees, I just don't have as much fun.

Lunch after the run was light but delicious: a can of cannellini beans, rinsed, heated on the stove with some olive oil, salt, pepper and thyme with a squeeze of lemon at the end served with a sliced tomato. I also enjoyed my current favorite afternoon sweet snack of organic flax seed raisin bran. I know that it sounds strange, but the raisins in milk are so sweet and the carbs hit the afternoon craving spot.

On the menu for this evening is homemade pizza. The crust is half regular flour and half whole wheat. Mine is pretty traditional with sliced tomatoes, mozzarella and basil with little dabs of pesto on the tomato slices. My sister piled hers high with mushrooms, onions, ricotta cheese and a pesto sauce in place of tomato sauce. Yum!

Day One


So far, so good. Day one includes breakfast of grapefruit juice, an Ezekiel Cinnamon Raisin English Muffin with Organic Crunchy Peanut Butter, fresh strawberries and the requisite cup of coffee. Not sure what to make for dinner, but I'm leaning towards a vegetarian day today.

I'm hoping it will be warm enough for a short run today, (I'm a total wuss about running in the cold!) and I'm looking forward to trivia with my cousins tonight! I've really got to book that flight to Japan. It's at $1,104 right now, but I just keep hoping it'll go down a bit.
